As warm summer nights float in, it’s a perfect time to dust off the grill. With so many differing opinions on sustainable seafood floating around, it can be quite challenging to make an informed decision. Your Daily Thread to the rescue! These four fish appear in the “best choice” category in each guide we consulted. Try one of these scrumptious recipes for a sustainable summer seafood feast that’ll surely go down in the books.
Cherry Salsa with Grilled Pacific Halibut
While the Atlantic Halibut are over-fished, its delicate Pacific cousin is a wonderful alternative. This firm, mild white fish holds up beautifully on the grill and is well complemented with a fresh cherry salsa!
Also try: Pacific Cod.
Grilled Chile Lime Arctic Char
Most Arctic Char is farmed from recirculating systems, which helps protect them from habitat contamination. Try this garlicky grill with subtle smoky undertones by way of ground chipotle peppers.
Also try: Barramundi.
Wild-caught Alaskan Pollack is a lovely white fish perfectly suited for tacos. Cilantro and cumin dance together in a fiery marinade on the grill, then the tacos are topped with a spicy ranch slaw. Pop open a few Modelos and call it a night!
Also try: U.S. Atlantic Mahi.
BBQ Grilled Wild-Caught Striped Bass with Orange Saffron Butter
This summer grill stunner, prepared and served whole, will surely elicit oohs and ahhs from adoring guests. Seemingly complex, but oh-so-easy to cook, this makes for the perfect party food this June!
Also try: Sablefish/Black Cod.
