Easy Czech Apple Struddle

Probably the most famous dessert you will find in Prague is apple strudel. Slices of sweet cooked apples enveloped between paper thin sheets of dough crispy on the outside, apple pie filling-esque on the inside. When I was little every family function involved two strudels topped with powdered sugar served alongside vanilla ice cream. On a recent trip to visit my grandmother in the Czech Republic, she taught me the “quick” strudel recipe and I am now back on team strudel. Seriously, this recipe is SO easy, anyone can make it.

Here’s the the absolute best, most impressive, and easiest recipe for your upcoming holiday party (do note that the dough recipe makes enough for 3 strudels).


Dough:
1 1/2 cups all purpose flour
1 150g container plain yogurt (I prefer Greek)
1 stick unsalted butter

Filling (for 1 strudel):
3 tablespoons breadcrumbs (preferably home made)
3 tablespoons butter
2 tablespoons brown sugar
pinch cinnamon
2 sour apples such as Granny Smith

1/4 cup chopped walnuts (optional)
1/4 cup raisins (optional)

Combine flour, yogurt, and unsalted butter to form dough. Knead until smooth, wrap in plastic wrap and refrigerate overnight..

Remove dough from fridge and divide into three even pieces.

Take one piece and roll out into thin sheet- as thin as you can get it (on floured work surface). Place rolled out dough on dishtowel.

In a small saucepan add breadcrumbs, sugar, cinnamon and 1 tablespoon butter. Melt butter and mix to combine. Sprinkle breadcrumb mixture atop dough. Add apple slices and walnuts and raisins if desired.

Now you need to roll up the strudel which is why we have that dish towel. Start rolling one end and then pull the dish towel up which should help the strudel roll into a a log. If you have questions about this technique feel free to ask in the comments or email me. Transfer to well greased baking sheet and place in 350°F oven. Melt remaining 2 tablespoons butter. After 10 minute of baking remove the strudel and brush exterior with butter. Repeat 10 minutes later. Bake until golden brown, about 25 minutes total. When the strudel comes out of the oven, brush with butter one more time. Let cool, top with powdered sugar and cut into pieces. YUM!
