Naturally Sweet Baked Apples

The weather is chilly and the holidays are here.  Of course, many of us accept this as a time to overindulge, but not every treat has to be accompanied by guilt.  This sweet dessert is full of fiber and nutrients and is sweetened by all natural ingredients.  Plus, it’s guaranteed to warm you up on the chilly nights!

Naturally Sweet Baked Apples

Serves 2

  • 2 apples (any type you like will do)
  • 1 cup apple cider
  • 6 dates
  • 1/4 cup walnuts
  • 1 Tbsp cinnamon
  • 1 tsp vanilla
  • 1 tsp nutmeg
  • 1/2 tsp cloves

Preheat oven to 350 degrees.

Remove core from apple by cutting around the stem with a paring knife.  Cut inward at an angle and then use a spoon to remove the remaining core and seeds.

Bring cider to simmer over low heat.  Let heat until reduced by 1/2.

Chop together walnuts and dates using a knife.  They will combine.  In a small bowl add in the spices.  Stuff the mixture into the middle of the apples.  Place apples into a pyrex baking dish.  Pour the syrup over the apples.  Bake in the oven for about 45 minutes until apples are soft.  Serve with vanilla ice cream if you want to be really indulgent!
