Sweet Seasonal Sweet Potato Fries

You know it’s fall when root vegetables are in full swing.  The local farmer’s markets are over following with squash, potatoes and my personal favorite the sweet potatoes.

Sweet potatoes make great side dishes, whether you bake them, mash them or turn them into “baked fries” like I do.  Sweet potatoes are full of vitamins, antioxidents and are much lower on the Glycimic Index Scale than white potatoes.

Here is a simple recipe for making delicious baked sweet potato fries with four simple ingredients.

Sweet Potato Fries

Ingredient List:

  • 2 whole sweet potatoes cleaned and peeled.
  • 3 tablespoons of olive oil (grape seed works well too).
  • 1 – 2 tablespoons of truffle oil.
  • Salt and Pepper to taste.

Directions:

Preheat oven to 400 degrees (toaster oven works well too).

Dice two peeled sweet potatoes into 3/4 inch strips and put into a bowl.

Combine 3 table spoons of olive oil, salt, pepper and mix together so that the sweet potatoes are throughly covered with the oil and seasonings.

Place the sweet potatoes on a flat pan and put into the oven for about 30 min (or longer if you prefer them crispy).

Remove the pan from the oven and gently drizzle the 1 table spoon of truffle oil evenly over the potatoes.  Put the pan back in the oven for 3-5 minutes, cool for a few minutes then serve.
