Deborah Stern, who calls herself La Guera (which means “white girl” in Spanish), was traveling along the Gulf of Mexico in Veracruz when she had the best tamale ever. So perhaps it was fate that a year later, she met a family of tamaleros in Mexico that invited her to learn their traditional and intricate method of hand-making tamales.

Armed with her new culinary skills, Deborah was determined to reproduce the deliciousness of these corn husk-wrapped treats, using organic and non-processed ingredients that were both nutritious and better for the environment. Many batches later, she perfected her delicious handmade tamales, and started her own organic catering business La Guera Tamalera to share them with everyone.

La Guera’s delicious made-from-scratch tamales use fresh, organic ingredients that never come out of a can – including, but not limited to, non-GMO corn masa (corn meal dough), organic vegetable oil, organic herbs and spices, organic free-range chicken, and organic cheese. She also uses local produces sourced from farmer’s markets, and her tamales have no lard or trans fat.

The La Guera menu of both savory and sweet tamales is a real treat – the Chicken Tamale in Green Sauce is a definite must-try, with its tender shredded organic chicken and delicious homemade tomatillo salsa. The Spinach & Mushroom is a vegan tamale made with locally grown spinach and local organic shiitake mushrooms that is so satisfyingly earthy and tasty, you won’t miss the meat.

If you’ve never had a dessert tamale, you’ll be amazed at how good the Strawberry Tamale is, with its fresh, organic farmers’ market strawberries. Deborah recommends you try it with a scoop of vanilla bean ice cream. Have a glass of La Guera’s organic horchata sweetened with agave nectar to wash everything down.
