Raw Pumpkin Pie: Our Version of the Holiday Favorite Gives Pumpkin the Raw Deal

All those Novembers ago… when the Pilgrims scraped together their first pumpkin pies… they were thankful just to have survived. But survival is so East Coast (just ask your favorite investment banker).

The West Coast is all about thriving, so we do it raw, we do it juicy. And we do it super.
Our holiday pumpkin pie is packed with carroty goodness – in fact, no pumpkins were harmed in the making. This baby gets its orange glow from a healthy infusion of carrot juice. Sorry pumpkin – maybe next year!

It’s all about raw, living food, and loaded with stimulating superfoods that tantalize the metabolism as well as the palate, including maca and mesquite. For added savor we use flower-of-the-ocean sea salt, spice it up with cinnamon and sweeten it with blue agave nectar (easy on the blood sugar). And for that wonderful creaminess (”Like-a-buttah”, as my Italian in-laws might have said), we use those tropical treats: lucuma, soaked cashews and coconut oil (for slippy-flowing blood) and non-GMO lecithin (for clearing cholesterol-clogged arteries). If this is starting to sound more like a test-tube concoction than a culinary delight – trust us. By the time we’re finished with it, this bevy of ingredients will dance across your tongue like Fred and Ginger (no, not that kind of ginger).

Can we top that? But of course – with a glaze of cranberry, raspberry, chia seeds and agave – a tangy yin to the pie’s sweet yang. And we do it all without dairy, without wheat or gluten, and totally without refined sugars! Your guests will be begging for to-go boxes. So, put away that can opener, shut off the oven – and seize the pie!
